The wine in the food, Spanish traditions

Hello people! How is everything? I am very happy to tell you a week more about some interesting things about my country. Today we are going to talk about wine in Spanish cuisine, because I think it is a very good element in food, which is why people from all over the world like Spanish food so much hehehe.

First a little history about the origins of the use of wine in food:

The Mediterranean culture is the culture of wine and oil. Wine is used in Spain since ancient civilizations, with the Phoenicians and the Greeks. It is surprising that many of the dishes that the Romans ate have been maintained until today, modernized and modified. 

Wine was a fundamental element in food (and even today in the called "Mediterranean diet" it still is). The wine is the result of a simple grape juice, which was kept in amphoras of sandy mud. Other times they turned the wine into vinegar.

The ancient civilizations added wine to the stews, and the vinegar they used for the seasoning and preservation of food. Adding some wine to the caramelized juices deposited in the
bottom of a pan or pan where a piece has been skipped, we get undoubtedly a much more enhanced sauce in aromas, a process that culinarily receives the name of "desglasado".
The red wines are used mainly to "deglaze" the ox or lamb; while whites to prepare clear sauces and perfect for pork and veal or fish.

Now I'm going to give you a couple of SUPER delicious recipes, and easy to make! :) 

"Pollo al ajillo con vino blanco" 
Chicken with garlic with white wine

INGREDIENTS
1 chicken in pieces
8 cloves of garlic
1 bay leaf
300 ml. of white wine
75 ml. of extra virgin olive oil
Salt and pepper




PREPARATION
First we put salt and pepper to the pieces of chicken.
In a deep frying pan or a casserole we put the oil, the bay leaf and the garlic peeled and cut.
When we see that the garlic is yellow we put the pieces of chicken and cook them for a few minutes (be careful not to make too much, if the garlic burns the food will not be so good!)
Then we add the white wine, and if we want more sauce, a splash of water.
Cover the casserole and let it cook for a while, until we see that the broth has evaporated for the most part and the sauce is thick.
And that's it! This recipe is very good, and as you can see it is not compliant, you can try it at home and tell me how it was!



Now another recipe that is quite similar, but in this case or we will use vegetables, in case there is someone vegetarian or vegans who wants to try this type of recipe. Although I want to tell you that this recipe is very delicious, and that I encourage everyone to try it. You know it is very important to eat vegetables every day, and this is a good way to cook the mushrooms. So, let's see how it is prepared!


"Champiñones al ajillo"
Mushrooms with garlic

INGREDIENTS
Fresh mushrooms
Extra virgin olive oil
Half a glass of white wine
oregano
Salt
Pepper


PREPARATION
In a deep frying pan or a casserole we put a jet of olive oil, the garlic peeled and cut, the oregano and the pepper.
When the garlic is yellow add the mushrooms cut in four parts (the mushrooms can be cut as you like, I like the big pieces, but everyone can do it as you like).
Add salt and wine and cover the pan.
The mushrooms will release water, it will be ready when we see that all the broth has been consumed and that there is no liquid in the pan.

    Add wine in food is good because improve the taste (“umami“). Mayte i can add it in our moroc chicken recipe.
